Named for Chef Julien Royer’s paternal grandmother, Louise (2019) is his return to first principles — the truffade, the roast chicken, the heritage recipes of an Auvergne childhood, reimagined across two floors of a heritage house in the gardens of Hong Kong’s PMQ. Awarded a Michelin star in its first year, it remains one of the city’s few rooms where French cooking is served without ceremony, and better for it.
